This feels like a super fancy dinner, but it’s easy to make. Don’t let the ingredient list scare you. We found the recipe on the Taste of Home website and paired it with a creamy lemon pasta to make it extra special. It’s a great dish for gatherings!
1/2 Cup Breadcrumbs
1/2 Cup Grated Parmesan Cheese
1 Large Egg
1 Tsp Garlic Powder
1/4 Tsp Salt
1/4 Tsp Pepper
1 lb Ground Chicken
2 Tbs Canola Oil
2 Cloves Garlic – Minced
1/3 Cup Chicken Broth
1/4 Cup Dry White Wine
1 Jar Capers
1 Tbs Lemon Juice
2 Tbs Butter
More Lemons and Parmesan Cheese for Serving
1/2 Lb Dried Spaghetti or Linguine
2 Tbs Butter
1 Tbs Lemon Zest (+ more for serving)
4 Tbs Heavy Cream
2 Tbs Parmesan Cheese
Combine the first 6 ingredients: Breadcrumbs – Pepper
Add the chicken and roll into 1″ meatballs
In a skillet, heat the oil and brown the meatballs in batches. You’ll cook them through with the sauce that’s following.
Next, add the garlic to the skillet and cook for 1 minute. After adding the broth and the wine and loosen the brown bits from the pan.
Add the capers and lemon juice and bring to a boil.
(Start a new pot of salted boiling water for the pasta)
Add the meatballs to the lemon and wine sauce and cook through, stirring occasionally
Heat the 2 Tbs of butter in a new pan and add the lemon zest
Add the dry pasta to the pot of boiling water started earlier
Add the cream to the butter and zest mixture.
Add the parmesan cheese and toss with the cooked pasta
Finish and Serve
Add 2 Tbs butter to the meatballs and sauce and stir until melted and blended
Add lemon pasta to a bowl and top with the meatballs and sauce
Top with additional parmesan cheese and fresh lemon wedges.
